Mango-Coconut Smoothie Bliss

This smoothie has proved to bring a sampling of summer to the grueling winter months. 

Now's the time to talk about coconut oil. As a nutrient-dense food, it's enriching benefits cannot be ignored:

-What is the reason for the long, luxurious hair of women in tropical regions? Coconut oil. This butter-like, nourishing oil shields against protein loss, which in turn reduces unhealthy qualities in hair development and assists in hair growth. Coconut oil can be massaged into the scalp to amplify these benefits, or can simply be ingested in order to promote luscious hair. 

-Coconut oil has agents that yield a glowing complexion and balanced skin. Unlike mineral oil, a popular ingredient found in store-brand skin care products, coconut oil does not bring about side effects and an imbalance in skin pH. 

-Coconut oil improves the digestion system, and thus, protects against digestion-related illnesses. The saturated fats concentrated in coconut oil have antimicrobial properties that deplete bacteria, which have the potential to cause stomach discomfort. It also aids in the absorption of vital nutrients such as amino acids.

-Coconut oil adds necessary healthy fats needed in a calorically dense diet. By adding one serving size (one tablespoon) of coconut oil a significant amount of calories can be added without expanding the overall portion size of the meal. This can ease anxiety surrounding meal times for those enduring recovery from an eating disorder. 


Due to Emma's morals, she has been following a plant-based diet. With the restrictions that come with such a diet, it is often difficult to concentrate calories in foods without causing the meal portions to seem overwhelming. Coconut oil, and specifically this shake, has proved to be a staple of Emma's diet throughout recovery and has aided in satisfying her caloric demands. 


Coconut-Mango Smoothie

10 ounces almond milk 

1 tbsp coconut oil

2 tsp raw honey

1/2 cup frozen mango chunks


This recipe is vegetarian but can be modified to be vegan by replacing the raw honey with agave syrup.


Mix these ingredients together in a blender of your choice to and return yourself to the consoling memories of summer.
